Savour Hokuriku's culinary heritage
Suju Cuisine Kanazawa

A dining destination offering simple yet satisfying Japanese cuisine featuring Shinshu miso, soy sauce, beans, and seasonal vegetables from our origins in Karuizawa.
A modern Japanese dining experience where exceptional ingredients and fine sake come together in perfect harmony.
Located on the first floor and basement level of HOTEL AO KANAZAWA, Suju Cuisine offers a spacious, inviting atmosphere with an open kitchen and bar counter, creating an immersive dining experience. Here, the best of local flavors meets Suju's time-honored culinary philosophy, with innovative touches that redefine traditional Japanese cuisine.
Our menu highlights the finest ingredients from the Hokuriku region—fresh seafood from the Sea of Japan, premium Noto beef, heirloom vegetables from Ishikawa, and locally brewed fish sauce from Noto. To complement these flavors, we offer a carefully curated selection of sake and wines, showcasing the depth of regional craftsmanship.
The meal concludes with a signature Suju touch: rice milled in-house and cooked to perfection in a custom copper pot, served alongside our fragrant miso soup and house-made pickles—each crafted with seasonal vegetables and inventive pairings. Guests can also enjoy Kanazawa's beloved oden, fermented delicacies, and local specialties, ensuring a complete and authentic taste of the region's culinary heritage.
