On the ground floor of HOTEL AO KANAZAWA, Suju Cuisine welcomes guests into a warm and inviting dining space, where time-honored flavors meet contemporary refinement.

Since the opening of Suju Masayuki Shoten in Karuizawa in 2004, the brand has expanded to Tokyo, Yokohama, Nagoya, and even Singapore. Yet its roots stretch back nearly two centuries to 1827, when it began as a miso brewery in Komoro, Nagano—crafting vinegar, miso, and soy sauce that continue to define its culinary philosophy today.

Suju is dedicated to showcasing the natural flavors of exceptional ingredients, creating simple yet deeply satisfying Japanese cuisine. The menu features dishes elevated by expertly crafted fermented seasonings, regional Shinshu specialties, and carefully curated pairings of local sake, Nagano’s acclaimed wines, and select artisanal brews.
